Safranal
– The Aroma
Safranal is the volatile oil responsible for saffron’s unmistakable fragrance – earthy, warm, and slightly sweet. It develops naturally when saffron is dried with care. A strong safranal presence means the saffron was harvested at the right time, dried at the right temperature, and stored properly. If your saffron has no aroma, it has lost its soul. Crocin
– The Colour
Crocin is the natural pigment that gives saffron its deep golden-red hue. It is one of the most powerful natural carotenoids found in any spice. The higher the crocin content, the richer the colour your saffron releases – and the more genuine it is. Kasmirana saffron consistently tests above 250 on the crocin index, placing it firmly in ISO Category I – the highest grade possible.
Picrocrocin
– The Flavour
Picrocrocin is the compound behind saffron’s unique bittersweet taste – the one that makes your kesar doodh, biryani, or phirni unmistakably alive. It is also a marker of freshness: the more picrocrocin, the more recently the saffron was harvested and the more carefully it was handled. Kasmirana saffron is harvested fresh each October and reaches you within weeks – not months or years.

You don’t need a lab. A glass of water will tell you everything.
The Water Test
Drop 2-3 threads into a glass of warm water. Real saffron slowly releases a golden-yellow colour over 10-15 minutes. Fake saffron bleeds red or orange instantly.
The Touch Test
Rub a thread between your wet fingers. Genuine saffron will stain your skin golden-yellow and the thread won't dissolve. Fake saffron crumbles or turns into a paste.
The Smell Test
Real Kashmiri saffron has a strong, sweet, earthy scent - almost like honey mixed with fresh hay. If it smells like plastic, chemicals, or nothing at all - it's not real.
The Flame Test
Hold a thread near a flame. Genuine saffron will not catch fire easily. It will darken and release a pleasant aroma. Fake saffron (often dyed corn silk) will burn quickly and smell like burning paper.
